USE & CARE

Please note that the Old Hickory knives are made with carbon steel.  We have been making Old Hickory since the early 1900's.  Carbon steel knives require extra care to prevent rusting and oxidation of the surface.  Old Hickory should not be placed in a dishwasher or allowed to soak in a sink.  We recommend cleaning the blade with a damp sponge or cloth and dry thoroughly.  Some people go a step further and apply a light coating of vegetable oil to the blades surface. If your blade shows signs of rust, use some steel wool to remove it and then apply some oil to the blade.   To keep the blade razor sharp, use a honing steel, sometimes referred to as sharpening steel, or sharpening stick. After years of use, the steel blade will develop a patina, a darkening which is desirable and an indication of its age.  Old Hickory knives are durable and affordable, but do require special care.

Knife block set OKC 7220

I bought the knife block set for my youngest daughter, and her first apartment. Knowing the set did not have the old 42S, 8" chef knife, as my set has. My set is 25+ years old. (Appears it is out of production) So I bought a good used one on ebay. The age old 42S won't fit, 'all the way in ', into the largest slot on the knife block. Lacks about 1/4" dropping in flush. Not a deal breaker, but advertised at the store that, "the Old Hickory Knife Block features extra knife slots for other Old Hickory Knives you may have laying around", un quote. Why not make the two top slots just a wee bit wider for older styles ? And why in the world would OKC stop making the age old 42S ?
Being the anal retentive sorta guy, I'm gonna drag out my dremel tool and make the adjustment.
In closing, these are great knives, and could last a lifetime. And re sharpen very easily.

Good knives

Great set of knives. Old fashioned carbon steel takes a good edge, and with proper care these will last a life time. I salvaged a couple of antique old hickory knives and they are still great knives.

Knife block/ Fabris

I purchased the knife block set for my wife as we have some Old Hickory knives from her grandfather that are at least 50 years of age. I wanted to mix the set of new knives with the old ones. Box arrived undamaged as did the box with the knife block. When i opened the knife block box, the block was crushed or broken on the backside.
Looks as if it was packaged that way. Would like a replacement if possible.
