USE & CARE

Please note that the Old Hickory knives are made with carbon steel.  We have been making Old Hickory since the early 1900's.  Carbon steel knives require extra care to prevent rusting and oxidation of the surface.  Old Hickory should not be placed in a dishwasher or allowed to soak in a sink.  We recommend cleaning the blade with a damp sponge or cloth and dry thoroughly.  Some people go a step further and apply a light coating of vegetable oil to the blades surface. If your blade shows signs of rust, use some steel wool to remove it and then apply some oil to the blade.   To keep the blade razor sharp, use a honing steel, sometimes referred to as sharpening steel, or sharpening stick. After years of use, the steel blade will develop a patina, a darkening which is desirable and an indication of its age.  Old Hickory knives are durable and affordable, but do require special care.

Excellent steel, poor handle

The steel is great, sharpen to your liking on whetstone and will cut and maintain an edge. Went through chicken bones, turkey, also pork to separate chops from center loin, hit it with the hammer (use a piece of wood to protect the knife), no problems. It means no chips, edge still functioning, this is also dependent on the edge sharpening angles.

The issue is with the handle, mine came loose with only two pins, although after it broke I discovered a 3rd pin could have been added since there is a hole for it in the midle of the handle. For this price, with an upgraded handle, you get a well performing and lasting blade. I've seen most of stainless steel cleavers with chips, bad dents in the edge, not the case with this product, light, yet dependable.

Solid. Well made, needs a touch of finishing

Bought this cleaver recently. Made in America. So far the blade has been excellent to work with. Just a hone out of the box makes for a very sharp edge, and what a great shape. Well balanced and not too heavy for a quality cleaver. Wood handle was a touch less finished out of the gate, but a couple rub downs with oil and a coarse rag smoothes it right out. Bottom line, if you're looking for a homeowner special with no character or if your looking for a samurai sword right out of the box, keep looking. If you're looking for a medium size cleaver you can use every day that responds to a little TLC, this is a great bang for your buck.

Great

Price point on this cleaver is great. The factory edge, not so much. It was sharp but very uneven. When chopping carrots, the cleaver would jump to the side every time. Luckily it sharpens relatively easily. New edge on it and it's fantastic.
