USE & CARE
Please note that the Old Hickory knives are made with carbon steel. We have been making Old Hickory since the early 1900's. Carbon steel knives require extra care to prevent rusting and oxidation of the surface. Old Hickory should not be placed in a dishwasher or allowed to soak in a sink. We recommend cleaning the blade with a damp sponge or cloth and dry thoroughly. Some people go a step further and apply a light coating of vegetable oil to the blades surface. If your blade shows signs of rust, use some steel wool to remove it and then apply some oil to the blade. To keep the blade razor sharp, use a honing steel, sometimes referred to as sharpening steel, or sharpening stick. After years of use, the steel blade will develop a patina, a darkening which is desirable and an indication of its age. Old Hickory knives are durable and affordable, but do require special care.
Did take a lot longer delivery then normal
I ordered this knife through Midway USA and the quality of the steel is fine and the handle fitting was as I expected. What surprised me was the grind marks on the blade and the terrible edge placed on the blade. About midway down the blade, both sides of the blade have a significant depression where someone just leaned the metal against the grinder. There is no feathering of the metal, just a rough semi-circular chunk (at least .5mm) taken from both sides of the blade that leads from the swell to the tip. One side of the blade was sharpened, but the other side was almost bare. This gives the blade an almost chisel type edge, which is not how this blade should be. Of the set of knives I ordered, this was the lemon. All the other blades were expertly finished. The two stars reflect the amount of effort and time I'm going to have to spend correcting these errors.
