The Chef’s Knife blade is a blending of the best aspects of the French and German Chef’s knife and the Japanese Hocho with a long, broad blade and approximately 40% of the edge profile flat to accurately mate with the cutting board. The Paring Knife is short and lightweight and very easily controlled when held in a reverse grip. The flat, tapered sides of the handle allow precise control of the blade position and the radius on the back of the handle fits comfortably against the palm. Not recommended for the dishwasher.
